French onion pork chops

These were some gooood pork chops! And the potatoes that are also on the plate are those velvetta cheesy potatoes. Not too bad! I'd recommend them.

French onion pork chops
Pork chops
2 envelopes onion soup mix
1/3 cup bread crumbs
2 eggs beaten

400* cookie sheet
Mix together the soup mix and breadcrumbs on a plate.
Dip the pork chops in egg then into breadcrumb mix.
Place on cookie sheet
Cook 10 mins on each side

How easy is that!!! No excuses for nor making this one!

Mushroom pork chops and potato cakes

So I made these pork chops last week and when I made out this months meals I accidentally put it again. But I didn't post it last time so I will this time. And the potato cakes omg were to die for. Everyone must make these!

Mushroom pork chops
Pork chops
Garlic salt
Mushrooms diced
Onions chopped
Cream of mushroom soup

Brown pork chops
Place onions and mushrooms in with pork chops and sauté for 1 min
Spoon soup on top and simmer for 20-30 minutes.
(How easy is that!?)

Potato cakes
2 cups cold left over mashed potatoes
4 tbsp cornstarch
Chopped onions
Salt & pepper

Combine ingredients and make flat patties (not too big)
In a pan pour canola oil enough to cover the whole bottom of pan and heat up.
When the oil is hot place 4-5 patties in at a time.
When you see the edges golden brown flip.
About 4-5 minutes on each side

So amazing seriously and they are so easy there's no excuse not to try these!

Mexican chicken casserole

My fiancé always says that I can make better Mexican dishes then a Mexican restaurant. I don't know if this is true or of he's just being nice haha. But after eating this he said its his new favorite and I must make it again.

Mexican chicken casserole
2 cans rotel
1 cup chicken broth
3 chicken breasts
1 cup chopped onions
1 cup evaporated skin milk
1 cup shredded Monterey Jack
2 oz cream cheese
10 oz enchilada sauce
Tortilla shells

350* 9x13 greased pan
Combine broth and 1 can rotel and bring to boil.
Add chicken and cook for 15 mins.
Shred chicken
Over medium high heat combine rotel, onions, evaporated milk, cooking liquids And chicken, Monterey Jack, cream cheese and enchilada sauce.
Cook for two minutes.
Break up 3 tortilla shells place in dish. Spoon half chicken mix on top. Shred 3 more shells and add remaining mix. Cover with cheese and bake for 30 mins

My mom needed some sour cream to make it not so spicy but she liked it. All in all its a good meal - amazing if you ask Marty.

Sweet potato baby food

So i started this blog while pregnant and now it's come to the time where mason is eating baby food. They really do grow up so fast.
I started off buying gerber stage 1 baby food. Before I started making anything I wanted to make sure he liked it. So far bananas, squash, peas and sweet potatoes are all favorites. Green beans and apples are no nos.
So off to Pinterest I went to begin my baby food making. First attempt is sweet potatoes. So easy just peel your sweet potato, slice it up small and bowl till you can easily break chunks apart with spoon. Save the water!
I used my magic bullet and placed sweet potatoes in and added the cooking water till I got the consistency I wanted. I purchased a 2 pack of ice cube trays for $2.50 at giant eagle. I filled them with the baby food and froze them. Tomorrow I will transfer them to ziplock freezer bags.
All together I will get 9 days of feeding out of what I made. And spent $1.99 on the sweet potato.
Bananas are next!!!

Spinach lasagna roll ups

This meal was super easy to make and the recipe I got off line didnt have chicken but I thought it needed something more

Spinach lasagna roll ups
Shredded chicken (optional)
15oz ricotta cheese
Frozen spinach thawed and chopped
8 lasagna noodles
Marinara sauce
1/4 cup Parmesan cheese
1 cup mozz cheese
1 egg
400* any sized baking dish greased
Cook noodles and rinse in cold water
Mix remaining ingredients together except marinara sauce
Fill noodles with mixture, roll up and place in dish. Pour marinara sauce on top
Bake for 30 minutes.

My dad and fiancé are troopers. They don't like spinach but they did try these meals and actually have liked them! See you can't be afraid to try things

Chicken Parmesan

We get our chicken from SAMs club so our chicken breasts are massive. I ended up cooking this 20 minutes longer then what it called for. Use your judgement on cooking time

Chicken Parmesan
3-4 chicken breasts
Bread crumbs
2 tbsp butter
Marinara sauce
Spaghetti noodles
Shredded mozz cheese

450* cookie sheet
Melt butter and dip chicken in butter then into bread crumbs.
Place on a cookie sheet (I covered mine with foil and sprayed it)
Cook for 20 minutes flip and continue cooking for 10 minutes
Meanwhile make your spaghetti noodles
Serve chicken on top of noodles with marinara sauce and mozz cheese.

California chilli

This meal can be made on the crock pot or not. If you want throw it in there go ahead if not its cool. I made it in the Crock pot to save me time later

California chilli
1 pound ground turkey
Medium onion chopped
Pinto beans
Kidney beans
1 tsp garlic powder 1 tsp chilli powder
8 oz can tomato sauce
1/2 cup BBQ sauce
2 large tomatoes sliced

Brown turkey in butter with onions.
Add remaining ingredients and simmer for 1 hour.
Or throw in the crock pot on low for however long you need

Serve with some corn bread and your good to go!
